Sushi is an easy way to get a large serving of a variety of vegetables! Now this may not look like regular sushi.. that's because it's not! I did not use rice, rice paper or seaweed for this recipe. I had a variety of vegetables in my fridge and the first thing that came to my mind was let's wrap em' up! Read below for the easy-peasy recipe to this fresh creation!
REICPE - Chinese cabbage - Red cabbage, finely chopped - Carrot, shaved - Mango, sliced into fine strips - Celery, sliced into fine strips - Avocado, chopped into little cubes - Green onion, chopped - Japanese panko crumbs
Directions for wraps: 1. Rinse all vegetables and dry before you chop 2. Cut thicker ends of Chinese cabbage, slice all vegetables and mango 3. Arrange vegetables on cabbage leaves however you want and top with panko crumbs
Ingredients for spicy peanut sauce: - 2 tablespoons garlic, finely chopped - 1/2 cup smooth peanut butter (I used cashew butter) - 1/3 cup soy sauce (add more if needed) - 1 teaspoon sugar - 1 tablespoon rice vinegar - 1 teaspoon siracha (or hot sauce) - 1/2 cup cilantro, finely chopped
Directions for spicy peanut sauce: 1. Chop garlic and cilantro, set cilantro aside and whisk until mixed 2. Add all ingredients into a bowl except for the cilantro 3. Once everything is mixed add in the cilantro 4. Chill in the fridge for 10 minutes before serving
